There are three variations of Zara Sac Bread: plain, potato-filled, or curd-filled. The bread is shaped to be approximately 1.5 cm thick, featuring a flat base with a gently rounded top, and its surface is decorated with finger-made indentations and raised patterns. Zara Sac Bread has a rich history and is closely linked to a particular geographical area. Production Method: The ingredients and preparation process for a single Zara Sac Bread are as follows: - 250 g bread flour - 150 g curd or 150 ml whey - 3.5 g rock salt - 10.5 g fresh yeast or 3.5 g instant yeast For the filling: - 150 g boiled potatoes - A handful of parsley - 150 g curd Salt, water, or whey from curd is combined in a bowl. After adding the flour and yeast, the mixture is kneaded thoroughly for approximately 15 minutes. The dough is then covered with a thick cloth and left to rest for 30 minutes. Once risen, the dough is divided into small balls by hand. Traditionally, these balls are rolled out on a low table into round shapes with a radius of 25 cm and a thickness of 1.5 cm. The bottom is flat, while the top has a gentle dome. The flattened dough is placed on a metal sheet with the flat side facing the wood fire to bake, then flipped to cook the top. During baking, the concave side of the metal sheet is positioned over the wood fire, and the bread cooks on the convex (back) side. The Zara Sac Bread can be filled with either potatoes or curd. For the potato version, boiled or roasted potatoes that have been peeled after cooking are mixed, sometimes with tomato paste. The curd filling is made by combining curd and parsley. About 150 grams of filling is placed in the center of the rolled dough, the edges are sealed, and the bread is shaped by hand to maintain a flat bottom with a slightly domed top.
