Çarşamba Kıvratması (also known as Çarşamba Twist) is prepared from a dough made of yogurt, vegetable oil, water, eggs, baking soda, and wheat flour. The filling consists of powdered sugar, walnut kernels, and hazelnut kernels. Its distinctive form is created by dusting the dough with starch, rolling it around a rolling pin, and then slicing it into square pieces. It is baked with melted butter and traditionally served without syrup.

Çarşamba Kıvratması boasts a rich history and is traditionally enjoyed during special events. The process of preparing the dough and crafting its unique square shape demands considerable skill and craftsmanship, which ties this delicacy closely to a particular geographical region.

Production Method:

The components used in the production of Çarşamba Kıvratması are as follows:
- 200 g yogurt - 200 ml vegetable oil - 200 ml water - 2.5 g baking soda - 3 eggs - 1 kg wheat flour - 1/2 kg starch (for rolling out the dough) - 750 g walnut kernels - 250 g hazelnut kernels - 1/2 kg powdered sugar - 750 g butter (for the topping)

The ingredients — yogurt, vegetable oil, water, eggs, baking soda, and flour — are combined and kneaded until the dough reaches a texture similar to an earlobe. After resting for 1 hour, the dough is divided into egg-sized balls and allowed to rest for an additional 10 minutes. Each ball is then rolled out on a surface dusted with starch to a thickness of about 0.5 mm and a diameter near 80 cm. The filling, made from a blend of powdered sugar, walnut kernels, and hazelnut kernels, is evenly spread over the dough. The dough is gently rolled around a rolling pin, neither too tight nor too loose. The final section of the dough is tucked inward, and the rolled dough is slid off the rolling pin, forming a distinctive twisted shape. It is then laid out on a flat tray and cut into square pieces. Melted butter is poured over the top. After baking at 180°C for 45 minutes, the Çarşamba Kıvratması is ready to be served, without syrup.
