Urfa Sillik Dessert

Product Description and Distinctive Features:

For serving the cooked Şıllık Breads, use a tray that fits their size appropriately. The 6 prepared Şıllık Breads should be divided into two portions. For the first portion: stack 3 Şıllık Breads one on top of another, then generously sprinkle 250 g of coarsely crushed walnuts over them. Next, stack the remaining 3 Şıllık Breads similarly and carefully slice them without disturbing their shape. Slicing requires precision, as the cuts must reach the bottom bread without sliding. The pieces can be cut into either square or diamond shapes.

Urfa Sillik Dessert

Production Method:

Dough Ingredients:
130 g flour
2 g salt
Approximately 480 ml water

Filling:
250 g coarsely crushed walnuts

Syrup Ingredients:
400 g powdered sugar
240 ml water
80 g clarified butter (ghee)

Preparing the Dough:
1. Combine the flour, water, and salt, mixing until you achieve a smooth and uniform dough.

Cooking the Dough:
1. Warm a nonstick pan over medium heat.
2. Lightly grease the pan’s surface with about 100 g pieces of tail fat, ensuring the entire surface is coated.
3. Pour a thin layer of the liquid dough onto the pan, enough to cover the bottom evenly. Cook the bottom side until it develops a light pink tint, then flip and cook the other side until it also turns slightly pink. Avoid adding more grease when flipping.
4. Repeat greasing and pouring the remaining batter in thin layers until all the dough is used.
5. Let each cooked Şıllık Bread cool separately. To keep them moist, cover with a clean bread cloth.

Preparing the Syrup:
1. Boil together 400 g powdered sugar, 240 ml water, and 80 g clarified butter (ghee) for about 5 minutes.
2. Drizzle the hot syrup evenly over the Şıllık Breads.

Presentation:
The traditional Urfa Şıllık Dessert can be served in two ways:

First Serving Style:
Arrange the Şıllık Breads neatly on a tray for serving.

Second Serving Style:
Stack 3 Şıllık Breads on top of one another, then sprinkle 250 g of coarsely crushed walnuts over them. Place the remaining 3 Şıllık Breads in a stack and carefully slice them without disrupting their form. This slicing requires skill, as cuts should reach the bottom bread without slipping. The pieces can be shaped as squares or diamonds.

After slicing, evenly pour the warm syrup over the dessert and garnish with walnuts. It is best enjoyed fresh and warm.

Serving as Rolls:
1. Lay one Şıllık Bread on a serving plate, place approximately 50 g of walnuts inside, then fold and roll it from the edges before slicing.
2. Pour the prepared syrup generously over the rolled Şıllık Bread, covering the entire plate. Decorate with walnuts and serve fresh and warm.
