Production Method: Ingredients: 4 kilograms of Birecik Eggplants 250 grams of lean minced lamb meat 1 teacup of Şanlıurfa Clarified Butter (Urfa Butter) 34 garlic cloves 1 teaspoon of salt Preparation: 1. Begin by grilling the Birecik Eggplants. Peel the garlic cloves and crush them together with salt. Meanwhile, sauté the minced lamb. 2. Remove the skin from the grilled eggplants and chop them finely. Then, mash the chopped eggplants into a smooth paste. Mix the crushed garlic into the eggplant thoroughly. 3. Spread the eggplant paste evenly on a flat plate, create multiple small indentations using your fingertips, and drizzle Şanlıurfa Clarified Butter over the surface. 4. While still hot, layer the sautéed minced meat on top of the eggplant paste. Pour hot Şanlıurfa Clarified Butter into the indentations. Serve the dish warm.
