Urfa Lebenisi

Urfa Lebenisi is a traditional soup unique to Şanlıurfa, known for being light on the stomach and having a cooling effect, as it is typically served cold. The term "Lebeni" originates from the Arabic word "leben," which means milk. This refreshing dish is prepared with ingredients such as yogurt, crushed wheat, chickpeas, and salt.

Production Method:

To prepare Urfa Lebenisi, soak 100 grams of chickpeas and 500 grams of pounded wheat overnight to soften them. Once softened, cook the chickpeas and pounded wheat by adding twice their volume in water. After they have absorbed the water and are still boiling, gradually combine them with 2 kilograms of yogurt that has been whisked separately with about 10 grams of salt. Stir the mixture continuously until it returns to a boil. Pour the hot Urfa Lebenisi into bowls and refrigerate. It is traditionally served cold as a starter before the main meal.
