Tunceli Sorbik Soup

The traditional cuisine of Tunceli mainly revolves around grains and products sourced from livestock, reflecting the region’s strong agricultural and animal husbandry heritage. One of the most famous local specialties is the “şorbik” soup, a dish closely associated with Tunceli. Commonly served at weddings, this soup is made with beef, chickpeas, and either milk or buttermilk.

Tunceli Sorbik Soup

Production Method:

Ingredients:
500g beef, cut into cubes
100g butter
200g chickpeas (soaked overnight and boiled)
500ml water
400ml milk
100g onion, finely chopped
10-15g salt

Instructions:
1. Place the diced beef in a pot and cook on low heat until all the water has evaporated.
2. Add the butter to the beef and sauté for about 12 minutes.
3. Stir in the finely chopped onions, drained chickpeas, and salt.
4. Pour in boiling water and let the mixture simmer gently on low heat for 40-50 minutes.
5. Add warm milk, cook for an additional 3-4 minutes, then remove from heat and serve hot.
