Traditional Turkish Sour Cherry Liqueur


PRODUCT DESCRIPTION:

The product is a distilled alcoholic beverage that features the distinctive flavor, color, and aroma of cherries, crafted by processing locally grown Turkish cherries. The production begins with the maceration of whole cherries in agricultural-origin ethyl alcohol for a period of three months, without adding any artificial flavorings or essences.

Once the maceration process is complete, the resulting Cherry Infusion is filtered and blended with simple syrup, rectified agricultural-origin ethyl alcohol, and demineralized water. The alcohol concentration is adjusted to about 32% by volume. To enhance the aroma, the mixture is naturally flavored with cloves.

After blending, the mixture undergoes a resting period of at least 20 days, allowing the flavors to mature. It is then filtered once more to ensure clarity and quality. The final outcome is a refined alcoholic drink that truly reflects the essence of cherries in both flavor and aroma.

Chemical Characteristics of the Product:
The traditional Turkish Cherry Liqueur gains its acidity naturally from the cherries, with an approximate acidity level of 2000 g per hectoliter, expressed as acetic acid. Below is the composition of the ingredients used in the preparation of 100 liters of this beverage:

Cherry Infusion:
Created by macerating fresh cherries without incorporating any artificial flavors or essences. The macerated mixture is then filtered to obtain the raw infusion material. For every 100 liters of pure alcohol, approximately 267 kg of cherries are used. The alcohol content of the infusion is around 31%, and its proportion in the final liqueur mixture is 55%.

Agricultural-Origin Rectified Ethyl Alcohol:
This is high-purity ethyl alcohol derived from agricultural sources and purified through rectification, a process that eliminates impurities such as aldehydes, esters, methyl alcohol, and higher alcohols by utilizing their differing boiling points. The blend ratio of this component in the liqueur is 15.6%.
