Production Method: The essential ingredients and preparation steps for Osmaniye Zorkun Tava are as follows: - 1 kg lamb cubes - 100 g tail fat - 2 red onions - 1 kg tomatoes - 3 green peppers - 2 red peppers - 15 cloves of garlic - 10 g hot or sweet red pepper powder - 20 g salt The lamb cubes, sourced from the leg and foreleg sections, are cut into pieces and arranged in a baking tray. Finely chopped red onions, garlic, and peppers are layered on top. Then, salt and red pepper powder are evenly sprinkled. The tomatoes are peeled, chopped, and spread over the mixture, which is then covered with tail fat. The tray is covered with a metal sheet and baked in a stone oven for approximately 1.5 hours.
