Osmaneli Quince Delight Product Description and Distinctive Features: Osmaneli Quince Delight is a unique confection made by boiling quinces until they form a smooth puree. When tasted, this traditional sweet delivers a rich quince flavor and a pulpy texture that gives the impression of biting into real fruit pieces. The delight has a soft, jelly-like consistency with a matte brown appearance and only slight shine. Its outer surface is finished with a coating of coconut, adding a subtle contrast in texture and flavor. Crafting Osmaneli Quince Delight demands both skill and experience, as the process is intricate and deeply rooted in local culinary tradition. The treat has become closely associated with the Osmaneli region, which holds historic importance as a leading area for quince cultivation. Production Method: Quinces harvested annually in November and December within the defined geographical area are finely chopped and then boiled for 7 minutes at a temperature of 75 °C. To prevent enzymatic browning, 0.1% citric acid is added to the boiling water. After boiling, the quince puree is cooled and deep-frozen at -18 °C for year-round use in the production of Osmaneli Quince Delight. Ingredients for Osmaneli Quince Delight (yielding approximately 50 kg of product): - 39 kg drinking water - 30 kg white sugar - 20 kg quince puree - 3.6 kg cornstarch - 70 g citric acid In a special delight cooking pot, cornstarch, sugar, water, and citric acid are combined and continuously stirred while boiling at 105–110 °C for about 2 hours. After that, quince puree is added to the mixture, and the blend is boiled again with constant stirring for an additional 1 hour and 45 minutes. When the cooking is finished, the hot delight mixture is poured into trays (approximately 12.5 kg per tray) that have been dusted with starch. These are then left to cool at room temperature for 6–8 hours. Once set, the cooled delight is transferred to marble surfaces where the tops are covered with grated coconut. Cutting is carried out using special delight scissors. The confections are shaped into cubes and coated once more with coconut. Under hygienic conditions and when stored in a dry environment at 15–16 °C, Osmaneli Quince Delight retains its quality for up to 6 months.
