Milas Tray Börek is a pastry made by layering thin dough sheets that are blended with olive oil, which has a free acidity level below 1%, extracted from memecik olives grown exclusively within the Milas district. The pastry is filled with a blend of various herbs that naturally grow and are specially cultivated in the Milas area, combined with curd cheese produced locally. The herbs used in the börek are either wild-harvested or intentionally farmed within the region. The curd cheese is made from the milk of cows grazing on the natural herbs found throughout Milas.

The curd cheese used in Milas Tray Börek is produced from the milk of cows that graze on the region’s natural herbs, imparting a distinctive herbal flavor. Both the herbs and vegetables included in the börek, as well as those that feed the cows providing the milk for the cheese, are shaped by the region’s unique soil, water, and climate conditions. This results in special flavors and aromas. The herbs used in Milas Tray Börek are available in mixed form under the name "böreklik ot" (herbs for börek) at the Milas Market.

Production Method:

The herbs available at the Milas Market, as described earlier, are carefully washed with plenty of water and combined. The cleaned herbs are then chopped into pieces no larger than 0.5 cm, placed in a bowl, and mixed with curd cheese. To this mixture, olive oil with a free acidity value under 1%, extracted from memecik olives grown within the Milas district, is added. The ingredients are mixed again to ensure the herbs and cheese blend harmoniously, forming the filling. The dough for the börek is prepared by kneading two eggs, a pinch of salt, and sufficient flour with warm water, then left to rest.

From the rested dough, nine thin sheets are rolled out to line the baking tray for the börek. The tray is greased with olive oil, again with a free acidity below 1%, sourced from memecik olives grown in the Milas region. Three sheets of dough are placed on the tray, with olive oil drizzled between each layer. The prepared filling is spread generously over these three sheets. Another three sheets of dough are layered on top, again drizzled with olive oil, followed by a second layer of filling. The final three sheets are placed on top, with olive oil drizzled between them. The assembled börek is then cut into squares, triangles, or diamond shapes as preferred. A mixture of one beaten egg and a little olive oil is brushed over the surface to prepare it for baking.

Milas Tray Börek is traditionally baked in neighborhood ovens heated by wood fires or in outdoor garden ovens. However, it can also be prepared in electric ovens at home. After baking, it is served on plates either plain or accompanied by strained yogurt, depending on personal preference.

When prepared in restaurants, bakeries, or ovens, Milas Tray Börek is transferred from the baking tray onto plates and served at an appropriate temperature. If the börek is not consumed immediately on-site, it is packaged for customers who wish to take it away. The börek is placed in glass, plastic, or specially designed cardboard containers that comply with the Turkish Food Codex and ensure the product’s quality is preserved. To maintain its texture and flavor, Milas Tray Börek is never packaged while still hot; packaging is done only after it has cooled.
