Malatya Pirpirimli Spicy Ayran, also known as Malatya Purslane Spicy Ayran, is a yogurt-based drink made from yogurt or strained yogurt, purslane, red pepper flakes, water, and salt. In the local area, it is sometimes called "yandım çavuş ayranı" (meaning burned sergeant ayran). This traditional beverage has ancient origins and plays an important role in the culinary heritage of Malatya province. The combination of red pepper flakes and purslane gives it a unique flavor that reflects the distinctive characteristics of the region, linking it deeply to local customs.

Malatya Spicy Ayran With Pirpirim

Production Method:

Malatya Pirpirimli Spicy Ayran (also called Malatya Purslane Spicy Ayran) is made using purslane harvested from the Malatya region. The ingredients include:
2 kg yogurt or 800 g strained yogurt
1 bunch of purslane
300 g red pepper flakes
1 liter water
Salt (optional)

The purslane is cleaned by removing the roots and thoroughly rinsed before being left to drain. Depending on taste, purslane can be used either raw or boiled. The yogurt and salt are vigorously whisked together, then water is added. Lengthwise-cut red pepper flakes and purslane are mixed into the yogurt blend. Additional water can be added to adjust the consistency. The prepared mixture is transferred into food-safe clay crocks, covered, and allowed to ferment at 4°C for 15 to 18 days to complete the fermentation. Malatya Pirpirimli Spicy Ayran is traditionally served in handled copper cups. The product is stored in food-safe clay crocks or glass jars at +4°C.
