Konya Paluzesi, also known as Konya Palize, is a classic dessert from the culinary traditions of Konya. It is prepared using starch, water, and honey. Traditionally, this sweet treat is served to new mothers after childbirth and to guests visiting the region, making it a popular dessert enjoyed across the entire province. With a rich history, Konya Paluzesi holds an important place in Konya’s cuisine and is closely tied to the local geographical identity.

Production Method:

Ingredients (serves 6):
1 liter of water, 60 g starch, 200 ml honey

Preparation steps:
1. Bring the water to a boil in a pot. Gradually add the starch, which has been dissolved in about 100 ml of water and mashed, stirring constantly to avoid lumps.
2. After about 10 minutes, once the mixture thickens, stir in the honey. When the mixture comes to a boil again, remove it from heat and pour it into serving bowls.
3. Let it cool down, then optionally sprinkle with cinnamon or rose water before serving.
