Konya Haside Tatlısı, also known as Konya Kara Helvası, is a traditional dessert made by roasting wheat flour in unsalted butter and then sweetening it with grape molasses. In his famous travel writings, Evliya Çelebi noted, “White bread, kahi, çörek, various kinds of helva, zülbiye, pandis, peşmani, and tahini are widely known. Yet, when lovers taste sabuni and white ring cheese, they find great joy in their flavors.” This historical reference highlights the rich culinary and dessert heritage of Konya, emphasizing the city's longstanding reputation for its distinctive sweets and traditional dishes.

In Konya's culinary tradition, the origins of Konya Haside Tatlısı or Konya Kara Helvası trace back to ancient times. Due to its historical significance and unique preparation, the dessert is strongly tied to the region’s identity and cultural reputation.

Preparation Method:

Ingredients (serves 4):
- 1 cup wheat flour
- 1 cup grape molasses
- 1/2 cup unsalted butter

Preparation, Cooking, and Serving:
Begin by roasting the wheat flour in unsalted butter over low heat until it takes on a golden brown color. In a separate bowl, gently warm the grape molasses, making sure it does not exceed 50°C. Once the flour is roasted, remove it from the heat and gradually add the warmed molasses while stirring continuously to avoid clumping. Return the mixture to the stove and continue stirring until the flour fully absorbs the molasses. When ready, take the dessert off the heat and let it rest for approximately 10 minutes before serving.
