Production Method:

The necessary components for making 4 servings of Konya Kuru Kabak Sarması are as follows: - 250 g minced meat - 400 g dried zucchini - 1 onion - 1 bunch of parsley - 25 g rice - 50 g fine bulgur - 60 g tomato paste - 1 tomato - 5 g black pepper - 5 g red pepper - 5 g mint - 5 g cumin - 12 g salt For the Sauce: - 14 g butter - 40 g tomato paste

To prepare the stuffing, finely chopped onions, parsley, grated tomatoes, ground meat, tomato paste, fine bulgur, rice, and a mix of spices are combined in a bowl. Meanwhile, the dried zucchini are boiled until tender. Once soft, a portion of the prepared mixture is placed inside each zucchini slice and they are neatly rolled.

In a separate pot, butter is melted and tomato paste is sautéed until aromatic. After turning off the heat, a small amount of hot water is stirred in. The stuffed zucchini rolls are arranged carefully in the pot and additional water is added just enough to partially cover them. To keep the rolls intact, a porcelain plate is gently placed over them. The dish is then simmered until fully cooked. Once done, Konya Kuru Kabak Sarması is transferred to a serving plate and presented hot.
