Konya Kıtırlı Mantı is made by first cooking a dough consisting of flour, egg, water, and salt in a pan. Once cooked, the dough is cut into small squares and boiled together with boiled green lentils. A sauce prepared from yogurt, garlic, and salt is then poured over the lentil and dough mixture. Some dough, reserved earlier from the pan-cooked batch, is roasted thoroughly in butter and placed on top of the sauced mantı. The dish is finished by sprinkling with red pepper and black pepper, and served hot.

Production Method:

For the Dough: - 200 g wheat flour - 600 ml water - 4 g salt - 1 egg For Cooking: - 200 g boiled green lentils - 1.2 liters water - 4 g salt For Kıtır (Crunchy Topping): - 5 tablespoons of dough (from the previously prepared square-shaped dough) - 50 g butter For the Sauce: - 200 g strained yogurt - 1 garlic clove - 4 g salt

Combine flour, water, salt, and egg, knead the mixture into a dough, then roll it out thinly using a rolling pin. Cook the thin dough sheet on a hot, flat pan until it firms up slightly. Cut the cooked dough into small squares, reserving about 5 tablespoons for the crunchy topping. Boil the remaining square dough pieces with salt in 1.2 liters of water along with boiled green lentils for 5 minutes.

In a bowl, mash garlic with salt and blend it with strained yogurt to form a smooth sauce. Pour this mixture over the boiled dough and green lentils.

To make the crunchy topping, roast the reserved 5 tablespoons of dough squares in butter until golden. Add these roasted pieces to the sauced mixture and sprinkle with red pepper and black pepper. Serve Konya Kıtırlı Mantı hot for best flavor.
