Although it has a firm, rock-like exterior, it melts quickly in the mouth when eaten. It is easily recognized by its large size, smooth texture, and its typically white color, although it can also be produced in various colors depending on its flavoring. In earlier times, locals in Konya referred to it as “ölü şeker” (meaning "death candy") and would traditionally offer it to visitors paying their respects at a funeral gathering. On normal days, it was sometimes consumed as a light meal by either wrapping it in fresh yufka (a type of thin flatbread) or crumbling it into equal parts. However, these traditional methods of consumption have mostly disappeared over the years. Today, Konya Peynir Şekeri experiences a revival in popularity, especially during the December ceremonies commemorating Mevlana, and throughout the summer months with the influx of tourists visiting the region. Historical records indicate that Konya Peynir Şekeri has been crafted in the city of Konya since the early 1950s, gradually earning nationwide recognition. For authenticity, the candy must contain a minimum of 94% sugar, and glucose is strictly prohibited in its composition. A defining aspect of this sweet is the unique bleaching technique used during production. This process involves introducing air into the candy, which both increases its volume and helps attain the ideal firmness. Once bleached, the candy is shaped into a log form, then sliced and left to rest. At this stage, the surface is lightly sprayed with water to create the signature cheesy texture and appearance, an essential step that reflects the skill and craftsmanship needed for perfect execution. If this technique is not properly followed, issues such as crystallization or stickiness may appear shortly after production. Production Method: In crafting Konya Peynir Şekeri, the primary ingredients include granulated sugar, water, citric acid, bergamot flavor, and natural colorants. The formulation consists of 94% granulated sugar, 5.88% water, 0.09% citric acid, and 0.03% bergamot essence. The sugar must comply with the Turkish Food Codex Sugar Regulation, specifically being refined white sugar with a minimum polarization of 99.7°Z, ensuring it is purified and crystallized sucrose. The product is free from artificial sweeteners and glucose/fructose syrups. The ingredients—water, sugar, and citric acid—are placed in copper cauldrons and continuously stirred while being heated to 140°C. Once the mixture develops a wax-like texture, it is poured onto cooling surfaces. After about 10 minutes, it becomes warm and slightly yellow. To achieve its signature whiteness, the mixture is transferred to a bleaching unit. This process lasts approximately 10 minutes, during which air is introduced using a specialized machine, giving the mixture a foamy and white appearance. Finally, natural flavorings and colorants are added to complete the process. In the preparation of plain (white) Konya Peynir Şekeri, no colorants are used, while a touch of bergamot flavoring is added for its distinct aroma. In the case of cocoa-flavored variants, coloring agents and vanilla essence are incorporated. For fruit-flavored Konya Peynir Şekeri, specific colorings and flavorings such as lemon, orange, banana, kiwi, and strawberry are used according to the intended variety. Once flavors are added, the shaping process begins. The sugar mixture is formed into a log shape with the help of shaping equipment and expert craftsmanship. Based on whether the candies are to be large or small, they are cut accordingly. The formed candies are then transported via a conveyor belt to a table fitted with an air-blown board, where any pieces stuck together are carefully separated. To give Konya Peynir Şekeri its signature melt-in-the-mouth texture, a fine mist of water is sprayed over the candies, and they are left to rest under a clean cloth for 24 hours. The resting stage is one of the most vital phases in the production of Konya Peynir Şekeri.
