Production Method:

Ingredients for 4-6 servings of Kırşehir Çirleme Yemeği include:
- 1 kg diced beef
- 750 g sun-dried apricots
- 250 g chickpeas (soaked beforehand)
- 200 ml grape molasses
- 1 medium onion
- 30 g butter
- 40 g tomato paste
- 10-15 g salt
- 5-10 g red pepper flakes
- 5-10 g black pepper
The beef and chickpeas are cooked separately until tender. The cooked meat is then cut into small pieces, and the broth is reserved. Apricots are soaked in water until softened.

In a large pot, finely chopped onions are sautéed in melted butter until they turn pink. Then, the meat, chickpeas, and softened apricots are added. The reserved broth is poured in just enough to cover the ingredients, and the pot is covered. Once it begins to boil, grape molasses, red pepper flakes, salt, and black pepper are stirred in. The pot is covered again, and the stew is simmered until the apricots are tender. After cooking, Kırşehir Çirleme Yemeği is served following a resting period of at least 4 hours.
