Karataş Kıddesi is a traditional baked pastry made by shaping dough prepared with bread flour, fresh yeast, sunflower oil, margarine, sesame seeds, cumin seeds, cinnamon, cloves, nutmeg, salt, and water. Before baking, it is brushed with a spiced coating made from sunflower oil, sesame seeds, cumin, cinnamon, cloves, and nutmeg, which enhances both its flavor and aroma.

With deep historical roots, Karataş Kıddesi is enjoyed not only as a part of daily meals but also holds an important place in celebrations and seasonal traditions. It is especially associated with holidays, festivals, and the transition from winter to spring. These customs firmly connect the pastry to its regional cultural identity.

Karatas Seniority

To prepare Karataş Kıddesi, bread flour, warm water, and fresh yeast are combined in a bowl. Then, a separate mixture containing sunflower oil, sesame seeds, cumin seeds, cinnamon, cloves, nutmeg, margarine, and salt is added to the dough ingredients and thoroughly kneaded. The dough is then left to rest and ferment for 40 minutes to 1 hour.

Once fermentation is complete, small pieces of the dough are taken and rolled into cylinders about 15 cm long by rolling between the hands or on a flat surface. The dough cylinders are gently flattened by pressing on a surface. A longitudinal groove is formed along the dough using the index fingers or on a flat surface. Into this groove, approximately 10 g of the spiced sunflower oil mixture is placed. The edges of the groove are then brought together and sealed lengthwise. The filled dough cylinder is held at one end and spirally coiled inward, resembling a snail shell.

The shaped dough is then brushed with the spiced mixture and left to rest for about 15 minutes. After resting, it is flattened into a circular shape by pressing side by side with the index and middle fingers of both hands on a flat surface. This thinning process is essential to ensure a crispy texture after baking. Typically, the diameter of Karataş Kıddesi is around 15 cm with a thickness of 1 cm. Although the size may slightly vary depending on the baking tray or commercial packaging, it always maintains a round form with thin edges for optimal crispness.

The pastries are placed on a baking tray and baked in a tandır oven or regular oven at 150–160 ºC for 30–35 minutes. After baking, they are allowed to cool for 15 minutes before being packaged in food-safe materials for sale.
