Karamanlı Coriander, derived from the species Coriandrum sativum L. of the Apiaceae family, is a plant that can reach a height of up to 60 cm. Its fruits are smooth and measure between 3–6 mm in diameter. The term Karamanlı Coriander specifically refers to the ripened and harvested seeds of this plant. It contains an average of 9.96% oil, 21.62% carbohydrates, and 14.3% protein, making it notable for its nutritional composition.

The composition and proportion of volatile oils are key factors in assessing the quality of coriander. According to the standards set by ASTA (American Spice Trade Association), the volatile oil content of Karamanlı Coriander ranges from 0.40 to 0.45, which is higher than the ASTA benchmark of 0.30. This makes it a superior-quality variety. The volatile oil profile of Karamanlı Coriander is notably abundant in linalool, along with significant amounts of γ-terpinene and α-pinene. Among these, linalool is the most dominant compound, making up 75–85% of the total oil content.

Production Method:

The Karamanlı region is known for its moist and mineral-rich soils. Once these soils are seasonally ready for cultivation, coriander seeds are sown in the spring using traditional methods—plowing followed by manual scattering. As the plants begin to grow, weed control is done manually through hoeing, and no chemical pesticides are used in line with the traditional production practices.

Thanks to the unique properties of Karamanlı Coriander, the crop requires only a minimal amount of water. The region’s adequate rainfall and favorable climate eliminate the need for extensive irrigation. Harvesting begins once the plant reaches a height of 55–60 cm including the roots. The most common method used in the region is seed harvesting. The right time for harvest is determined by a color change in the seeds—from yellow to brown at the tip—signaling maturity. Harvesting typically takes place between mid-July and late August, depending on the method used and seasonal weather conditions.

A key feature that sets Karamanlı coriander apart is its traditional production and harvesting method. In addition to being free of chemical pesticides, its harvesting period—from the second half of July to mid-August—coincides with optimal climate conditions. Ensuring the harvest occurs during dry weather without rainfall helps preserve the crop’s high quality. Once the seeds are fully dry and easily separated from the plant, they are collected, then stored under ideal conditions, allowed to mature further, and dried before being sold.
