Karaman Layered Pastry is a traditional delicacy from the Karaman region, prepared using phyllo dough, low-fat cottage cheese, yogurt, eggs, and vegetable oil. This savory pastry, whose history traces back to the late 19th century with the arrival of immigrants to the area, is also referred to as "migrant pastry" due to its historical background.

The origins of Karaman Layered Pastry go back to early historical periods and it plays an important role in the gastronomic heritage of Karaman province. For this reason, it is closely linked to the local geographical identity.

Production Method:

Ingredients:
- 500 g phyllo dough
- 225 g low-fat cottage cheese
- 360 g yogurt
- 2 eggs
- 24 ml vegetable oil

Preparation Method:

A mixture is created by whisking together the eggs and yogurt. The phyllo dough is laid out on a clean surface and coated with the prepared mixture. Small portions of low-fat cottage cheese are scattered over the dough at regular intervals. The dough is then folded from opposite sides toward the center and sliced into thick pieces, approximately 5-6 cm wide. These slices are arranged in a spiral pattern on a greased tray, starting from the outer edge moving inward. Vegetable oil is added to the remaining yogurt mixture, stirred, and evenly poured over the dough. Gently shaking the tray helps the sauce seep into the layers. Finally, the pastry is baked in a preheated oven at 180°C until it turns a golden brown. Karaman Layered Pastry can be enjoyed while hot or, once cooled, stored in food-safe packaging for later consumption.
