Izmir Shambali Product Description and Distinguishing Features: İzmir Şambalısı is a traditional dessert made by baking a mixture of semolina (wheat semolina), powdered sugar, milk or yogurt, starch, and baking powder using the proper method in a baking tray. After it is fully baked, the dessert is soaked in sweet syrup to enhance its flavor and texture. Before baking, it is common to garnish the top with almonds or pistachios for added taste and decoration. Production Method: To make the syrup, water and sugar are brought to a boil. Once boiling, it is kept at that temperature for about 10 minutes. Then, lemon juice or citric acid and vanilla are added, and the mixture is boiled for an additional maximum of five minutes before being set aside to cool. In a separate bowl, semolina, sugar, starch, and baking powder are mixed thoroughly. Milk or yogurt is then added, and the ingredients are kneaded together until a smooth, consistent dough is formed. This dough is placed in a baking tray and evenly pressed by hand until it reaches a thickness of approximately 2.5 to 3.5 cm, ensuring an even spread throughout the tray. Almonds or pistachios are gently pressed onto the surface, with at least one nut on each portion. The dessert is then baked in a preheated oven at 180°C for 40–45 minutes. Once removed, the dessert is cut into rectangular slices and returned to the oven for an additional 15 minutes of baking. After baking, the cooled syrup is poured over the dessert until the base of the tray is covered with a syrup layer approximately 0.5–0.6 cm deep. The dessert is allowed to cool before serving. Once prepared, İzmir Şambalısı can be stored for up to one week at a temperature of around 15–20°C, provided it is kept in its tray and under proper storage conditions.
