Hopa Laz Pastry


Description and Distinguishing Features of the Product:

The Laz people, who have inhabited the eastern Black Sea Region for more than 2500 years, have maintained their cultural heritage in this land. Over time, they have deeply integrated their traditions into the region, making it closely associated with their culture. Hopa Laz Börek is made by rolling out rested dough into thin layers and placing a specially prepared filling between these sheets before cooking.

Production Method:

Ingredients: 1 egg, 2 tea glasses of milk, ½ tea glass of water, 3 cups of flour, 1 teaspoon of salt.

For the filling: 3.5 kg of milk, 4 cups of sugar, 2 cups of flour, 1 slightly heaping teaspoon of salt, 4 eggs, 3 heaping tablespoons of yogurt, 1 teaspoon of ground black pepper, 350 grams of butter for baking.

Instructions: To prepare the dough, mix all the ingredients thoroughly and let it rest. Meanwhile, prepare the filling by combining milk, sugar, flour, and salt in a pot and heat until just before boiling, then remove from heat. Whisk 4 eggs, 3 heaping tablespoons of yogurt, and 1 teaspoon of ground black pepper well, then add them to the filling mixture. Roll out 8 sheets of dough from the rested dough. Grease a baking tray generously and place 4 sheets on the bottom. Pour the filling over these sheets and sprinkle 1 cup of sugar on top. Drizzle approximately 350 grams of butter over the filling. Bake in a preheated oven for 45 minutes. After baking, remove from oven, butter the remaining 4 dough sheets and place them on top of the filling. Bake again at 170°C until the top sheets turn golden brown. Once done, remove from oven, cover with a cloth and serve cold.
