Gümüşhane Sironu is a classic pastry from the region, typically enjoyed as a snack. It can be served either warm or cold, making it a versatile appetizer to suit different tastes.

Production Method:

In the preparation of Gümüşhane Sironu, the dough ingredients consist of:
- 1000 g of flour
- 0.5-0.6 liters of water
- 5-10 g of salt
The dough is processed by mixing the flour and water, then rolled into thin sheets called yufka. These sheets are partially cooked on special iron plates heated by an open flame, folded 4 to 6 times, and cut into strips approximately 1-2 cm long. Before baking, the cooking plate is coated with a clay made from oak wood ashes, about 3-5 mm thick. After the clay dries, the sheets are baked over an open wood fire.

The yufka sheets should meet these specifications:
- Maximum thickness of 1.2 mm
- Weight between 260-380 g per 100 pieces
- Maximum moisture content of 17%
- Maximum ash content of 3%
The folded Gümüşhane Sironu pastries take the form of rectangular prisms rather than circular shapes.

Once prepared, the sironu pastries are placed side by side on wide trays in a shaded area to dry for 1-2 days. When arranged this way, they maintain their rectangular prism shape. These pastries can be stored for up to 24 months in a moisture-free environment without spoilage. For serving, the dried sironu are laid flat on metal trays and warmed in an oven. They are then generously topped with a layer of diluted or strained yogurt, followed by melted butter and, optionally, sprinkled with chopped walnuts.
