Production Method: Ingredients for Gaziantep Pickled Green Walnut and Pepper (suitable for a 5-liter jar): – 2 kg green walnuts (firm and thin-skinned) – 1 kg red peppers (preferably from within the designated geographical region) – 1–2 cloves of garlic – 400–700 ml vinegar – 2–2.5 liters of water – 220–300 g iodine-free rock salt – 100–140 g lemon salt – 20–30 g chickpeas (optional) Preparation of Gaziantep Pickled Green Walnut and Pepper: Begin by peeling the garlic cloves and slicing off their tops. Rinse and dry the green walnuts and peppers thoroughly. Trim the tips of the walnuts and slice them into halves or thirds, each piece measuring around 10–15 cm. To prepare the peppers, either hold them by the stem and make a crescent-shaped cut from the rounded bottom, or place them on a board and cut the seeds vertically in two parts. Arrange the prepared garlic, walnuts, and peppers in a 5-liter food-safe glass or plastic jar. If using chickpeas, place them at the bottom of the jar first. In a separate container, combine the water, vinegar, iodine-free rock salt, and lemon salt, stirring until dissolved.
