Gaziantep Muhammara

Gaziantep Muhammara is a chilled dish often enjoyed as a breakfast spread or appetizer. It is made by combining fresh red peppers or red pepper flakes with hardtack or biscuit crumbs, walnuts, pomegranate molasses, and a variety of spices. This dish holds an important place in the culinary traditions of Gaziantep and has a long history linked to the region's geographical identity.

Gaziantep Muhammara

Production Method:

Ingredients for Gaziantep Muhammara (serves 5-6 people):
250-300 g of fresh red peppers or 70-90 g red pepper flakes
30-40 g of red pepper flakes (if using fresh peppers)
100-200 ml of olive oil
80-160 g of walnuts (coarsely chopped)
6-7 pieces of hardtack or 70-90 g biscuit crumbs
15-20 ml of pomegranate molasses
Juice of 1 lemon
50-75 ml of water
3-6 g of cumin
2-3 g of black pepper
Optional allspice
Salt
1-2 sprigs of parsley or 2 walnuts for garnish

How to prepare Gaziantep Muhammara:
After cleaning and washing the fresh red peppers, they are finely ground using a meat grinder or food processor. Then, biscuit crumbs or crushed hardtack, chopped walnuts, cumin, red pepper flakes, and water are added and mixed thoroughly. Next, lemon juice, pomegranate molasses, salt, and olive oil are incorporated and blended again. Finally, the dish is decorated with parsley leaves or walnuts according to taste.

Muhammara made with Red Pepper Flakes:
Mix 200 ml olive oil with red pepper flakes and let it rest. Soak the biscuits in water, then squeeze out the excess liquid and combine with walnuts and the olive oil and red pepper mixture. Add black pepper, optional allspice, cumin, pomegranate molasses, salt, and lemon juice, then mix well. Garnish with parsley leaves or walnuts as preferred. Both versions of Gaziantep Muhammara are served chilled.
