Product Description and Distinctive Features:

Gaziantep Kuymağı / Antep Kuymağı is a traditional sweet treat made from flour, sugar, and essential ingredients like clarified butter or regular butter. Originally prepared as a special dessert for new mothers in Gaziantep, it gradually gained popularity and became a commercial product. The dessert’s uniqueness lies in its two-step preparation process, where the final step involves melting clarified or regular butter, pouring it into bowls, and serving it warm. Its texture is often compared to meyane, a thickened fruit juice.

Gaziantep Kuymak

This dessert occupies an important position among Gaziantep’s traditional sweets, distinguished by its unique ingredients and preparation method. Known as Gaziantep Kuymağı / Antep Kuymağı, it represents a valuable part of the region’s cultural legacy.

Production Method:

Ingredients (for 2-4 servings):

- 1 cup of flour
- 2 heaping tablespoons of clarified butter or regular butter
- 1 cup of sugar or half a cup of liquid molasses
- 4-5 cups of water
- Optional: cinnamon powder, walnuts, Gaziantep Pistachio (with registered geographical indication number 27), or black pepper

Preparation:
1. In a saucepan, mix half of the clarified or regular butter with the flour. Stir constantly to avoid lumps and roast until it turns a golden brown color. Then, let the roasted flour cool down.

2. In a separate bowl, dissolve the sugar or molasses in water by stirring well. Gradually pour this liquid into the cooled flour while continuously stirring until the mixture is smooth. Using a whisk will make this easier.

3. Return the mixture to the stove and cook over medium-low heat, stirring continuously until the raw flour smell disappears and the mixture thickens to a porridge-like texture.

4. Serve the Gaziantep Kuymağı / Antep Kuymağı hot by placing it in bowls. Melt the remaining clarified or regular butter and drizzle it over the dessert. Optionally, garnish with cinnamon, walnuts, Gaziantep Pistachio, or black pepper before serving warm.
