Chickpeas should be soaked in water the day before, ensuring the water level is about two fingers above them. The diced meat must be rinsed well and boiled in a pot containing 4-5 cups of water. During the boiling process, skim off any foam that rises to the surface. Add the soaked chickpeas to the pot and cook until both the meat and chickpeas are tender. Remove the strings from the fresh beans, chop them into pieces, and add them to the boiling meat and chickpea mixture.

Beat an egg into the strained yogurt and mix thoroughly. Warm the yogurt mixture over very low heat, stirring continuously in one direction. Slowly incorporate some of the cooking liquid from the stew into the yogurt while heating. When the mixture starts to boil, stir well and then add it back into the main dish. Allow it to simmer for another 1-2 minutes.
