Erzurum Tatar Pastry Product Description and Distinguishing Features: Erzurum Tatar Böreği is a pastry dish originating from Erzurum province. It is made by rolling out dough prepared with wheat flour, eggs, salt, and water, then cutting it into triangle shapes. The dough is boiled, and a sauce is poured over it, which consists of garlic yogurt, a minced meat sauce, and a sauce made with butter and red pepper. The minced meat sauce is prepared using lean ground beef, olive oil, parsley, black pepper, and salt. Erzurum Tatar Böreği, often referred to as "innerless mantı" in the region due to its similarity to mantı (Turkish dumplings), features dough that is triangular in shape, approximately 2 cm thick, with side lengths of about 5x3x3 cm. These dough pieces, when dried for future use, can be preserved by freezing at -4°C. The origin of Erzurum Tatar Böreği dates back to ancient times, holding a special place in the culinary heritage of Erzurum province. For this reason, it is deeply tied to the local culture and is highly regarded in the region. Preparation of the Dough: In a bowl, flour, eggs, and salt are combined. Gradually add water while kneading the mixture. Divide the dough into 5 portions, and roll each portion on a floured surface to a thickness of 2 cm. Cut long strips with a width of at least 5 cm, then cut the strips into triangles with side lengths of approximately 5x3x3 cm. Dust the pieces with flour and place them on a tray. Once spread out on a flat surface without touching each other, leave the triangular dough pieces to dry at room temperature for about 24 hours. After drying, they can be frozen at -4°C for later use. In a pot, bring 2 liters of water and 6 g of salt to a boil. Once boiling, add the triangular dough pieces and cook for about 15 minutes or until tender. To prepare garlic yogurt, mix yogurt, salt, and grated garlic in a bowl. For the sauce, heat butter in a pan and add red pepper flakes. Sauté ground beef in olive oil, then add finely chopped parsley, black pepper, and salt. Cook for an additional 1 minute to prepare the minced meat sauce. Drain the boiled dough pieces and arrange them on a serving plate. Drizzle with garlic yogurt, minced meat sauce, and red pepper sauce. Serve the dish hot.
