Erzincan Grape Wrap Product Description and Distinctive Features: Erzincan Üzümlü Sarucu is a traditional product made by slicing Cimin Grapes, which are registered as a geographical indication under number 37. The grapes are cut in half, the seeds are dried, and then they are filled with walnuts. Finally, the stuffed grapes are threaded onto cotton thread for consumption. The origins of Erzincan Üzümlü Sarucu date back to ancient times, and it occupies a significant place in the culinary heritage of the region. Its production requires a high level of skill, particularly in the preparation and drying of grapes. Furthermore, the tradition involves carefully stuffing walnuts into dried grape seeds and then threading them onto cotton thread. For these reasons, there is a strong connection between the geographical area and its well-established reputation. Production Method: To produce 1 kg of Erzincan Üzümlü Sarucu, approximately 650-700 g of dried Cimin Grapes and 300-350 g of fresh walnut kernels from the Juglans regia L. variety, grown in the local area, are required. The production of Erzincan Üzümlü Sarucu involves two main steps: first, the drying of Cimin Grapes, and second, the stringing and drying of the "walnut kernels - grapes" combination. In the initial stage, large grape seeds are selected from the Cimin Grapes bunches, carefully cut in half with a sharp knife to ensure that the grape pieces stay intact. After removing the seeds, the grapes are spread on wooden pallets and covered with a clean cloth. They are left to dry for around 3 days until their weight decreases by 75-80%. In the second stage, the dried walnuts are wrapped with dried grape pieces and strung onto cotton threads. Each walnut half is wrapped with three stacked grapes. It is preferred that the walnuts be fresh during the stringing process to prevent breakage. If the walnuts are dry, they are moistened using a damp cloth. The next step involves the second drying of Erzincan Üzümlü Sarucu, which is done by stringing the walnut and grape combinations on thin cotton threads and exposing them to the sun. This drying process takes between 24 to 48 hours. After the drying process is completed, the Erzincan Üzümlü Sarucu is packaged in a way that prevents exposure to air and is stored in cool places.
