Devrek Komeci Description and Distinguishing Features of the Product: This product, made in nearly every village and the town center of the Devrek district, is a pastry traditionally enjoyed by families during special occasions such as religious holidays, engagements, weddings, and is often offered as a treat to guests. In modern times, it has evolved into a commercial product, sold in local markets within the Devrek region, while still being made using traditional methods. The key elements that make this product distinctive are its two main ingredients: the walnuts grown in the rural areas of Devrek and the local wheat of the region. The local wheat, known as Flamura 85, shares similar characteristics with other varieties. Devrek Kömeci or Devrek Walnut Kömeci, with its traditional flavor passed down through the years, is a regional product made from dough kneaded with the crushed inner part of Devrek-grown walnuts and local wheat, combined with water and milk. It is prepared both leavened (especially sourdough) and unleavened. Production Method: 1. Ingredients 1 kg of flour, 600 ml of water, 200 ml of milk, 100 ml of yogurt, 20 g of salt, 1 egg, 100 ml of liquid oil (natural or refined olive oil), 500 g of crushed walnut kernels; for brushing on top: 1 egg yolk, 10 g of Nigella seeds, 10 g of sesame seeds. Flour: A mixture of whole wheat flour ground from local wheat and hard wheat flour known as "has un" in the region. Walnut: A type of walnut with thin shells, easily cracked, known in the region as "koz", grown in areas such as Kozlugüney, Kozlukadı, Kozludere, Kozluçay. Preparation of the Dough: After sifting the flour, a well is created in the center. Salt and egg are added to the well, and gradually the mixture is kneaded by adding water and milk while stirring. Once the dough reaches the consistency of a soft earlobe, knead for another fifteen to twenty minutes to allow the dough to rest, covered with a cloth for about ten minutes. After resting, the dough is divided into three or four pieces (known as "pazi" or "beze"), and each piece is kneaded again. It is then covered with a cloth and left to rest for another approximately ten minutes. Once rested and well-kneaded, the dough pieces are rolled out using a rolling pin made from the branch of a cornelian cherry (kiren) tree. The thin sheets are brushed with liquid oil and stretched further with the rolling pin. This process both thins the dough and ensures the olive oil is absorbed properly. The oiled sheets are generously sprinkled with crushed walnuts, and the oiled walnut-covered sheets are then rolled into a spiral shape. Care is taken to ensure that the walnuts used are from the previous year (referred to as "bıldır" in the local dialect) and that they do not have a rancid or moldy taste. After greasing a beaten copper tray with liquid oil, the rolled dough is placed on the tray in a spiral pattern. It is then baked in a preheated oven at 175-200°C for about an hour, with a coating of beaten egg yolk, Nigella seeds, or sesame seeds, or a mixture of both, sprinkled on top.
