Delice Natural Spring Salt


Description and Distinguishing Features of the Product:

Delice Natural Spring Salt is a naturally formed crystal salt, produced by bringing subterranean waters from the Delice district to the surface and allowing them to evaporate under the sun in open-air pools, located just 500 meters from the Çoğul Salt Flat. This salt crystallizes naturally without undergoing any refining process and is made entirely without additives. With a history of production exceeding 100 years, Delice Natural Spring Salt is available in three types: brine salt, mill-ground salt (table-ground), and fine table salt. It is characterized by its white color, neutral scent, cube-shaped crystals, and smooth, soft texture.

Production Method:

The natural spring waters emerging from several points at the base of Kılıçözü Mountain in the Delice district surface without the need for any drilling. To preserve purity, these waters are isolated from external contact and directed through pipes to a resting basin that is covered with 1.25 cm thick greenhouse-style glass. After a few days of resting, the water is transferred into shallow pools—each about 20 cm deep—also covered with the same type of glass. Here, salt crystallization occurs naturally as the water evaporates under the sun. Excess moisture is extracted via a large vacuum ventilation system. The salt that forms in the pool is then left to air-dry in a natural environment. To further decrease its moisture content to a maximum of 0.5%, it is treated with hot air ranging from 50 °C to 60 °C.

The sieving process separates the salt into different grades based on crystal size. Using titration methods, salts are funneled into hoppers through three types of sieves:
1) Ground Table Salt (fine): This grade passes through a 1000-micron sieve.
2) Table-Ground Salt (mill salt): These crystals pass through a 2000-micron sieve and are typically packaged in glass mill bottles for sale.
3) Brine Salt: The coarsest variety, which passes through a 2500-micron sieve.

The bottoms of the pools are lined with an antibacterial, food-safe membrane, allowing for full sunlight exposure while being covered by greenhouse-style nylon. Polycarbonate pools are used as resting pools, while the greenhouse pools are dedicated to the evaporation process, where the salt crystallizes naturally.

The greenhouse acts as a protective barrier, shielding the underground water from rainwater and pests. After the natural evaporation process during the summer months to produce salt, the pools are cleaned with pure water and undergo regular maintenance.

Delice Natural Spring Salt remains in its pure, unrefined state. The product is packaged in compliance with the Turkish Food Codex Salt Regulation and is stored according to the standards outlined in the Turkish Food Codex Regulation.
