Catalzeytin Hazelnut Candy Product Description and Distinctive Features: Çatalzeytin Hazelnut Sugar is a sweet treat made by coating roasted, top-quality hazelnuts with a mixture of syrup, flour, and starch, all heated in a copper cauldron. This delicacy, which requires expert craftsmanship, has been made in Çatalzeytin since 1918 and is highly regarded in the region. Production Method: To produce 20 kg of Çatalzeytin Hazelnut Sugar, the following ingredients are required: 5 kg of roasted, first-grade hazelnut kernels that are whole and unbroken, 10 kg of white sugar that complies with the Turkish Food Codex Sugar Regulation, 10 liters of water, 5 kg of flour that meets the standards of the Turkish Food Codex Wheat Flour Regulation, 2 kg of starch, and 2 lemons. A 3 cm thick rotating copper cauldron is heated over medium heat. The hazelnuts are placed into the cauldron and warmed for about 20 minutes. Then, a ladle of syrup prepared from sugar, water, and lemon is poured in. After that, one ladle of flour and a tablespoon of starch are gradually added. The mixture is stirred continuously and heated in the rotating cauldron for 10 minutes. This process is repeated over a span of 4 hours. The constant rotation helps prevent the hazelnuts from sticking together. Once the 4-hour process is complete, the Çatalzeytin Hazelnut Sugar is removed from the cauldron and spread onto a marble surface to cool. After cooling for 2 hours, it is packed into airtight containers and prepared for sale.
