Cankiri Egg Dessert Description and Distinctive Features of the Product: Çankırı Egg Dessert is a traditional syrupy dessert that has become a signature dish of Çankırı province. It has been a beloved treat for many years, often prepared by the local people. This sweet delicacy is especially made for guests after iftar meals during festive times, particularly in Ramadan. The dessert is a key part of the "takım yemeği", a traditional feast meal prepared by the community. In recent years, Çankırı Egg Dessert is also made and sold at local pastry shops in Çankırı, serving weddings and special events. It is even available for custom orders, ensuring that it continues to be enjoyed on special occasions. Production Method: Ingredients (for 24 servings): For the Dough: - 15 fresh eggs - 6 tablespoons (2 cups or 200 grams) sifted flour - 1 teaspoon butter For the Syrup: - 6 cups sugar - 6 cups water - 2 drops lemon juice Preparation Instructions: First, separate the egg whites from the yolks. Using a mixer, beat the egg whites until they form a thick consistency. This process should take about 10-12 minutes at the lowest setting on the mixer. To check if it's done, invert the mixing bowl — the mixture should not fall out. In a separate bowl, beat the egg yolks and add them to the beaten egg whites, then continue mixing for a little longer. Next, sift the flour over the mixture and continue beating for an additional two minutes. Once combined, pour the mixture into a glass dish and bake in a preheated oven at 175°C for 35 minutes. The baking dish should be about 27x40 centimeters or a 30 cm diameter glass or copper container. Do not open the oven door during baking. Once the dessert has cooled slightly, slice it and pour over the previously prepared syrup that has been boiled and cooled.
