Beypazarı Carrot Delight Product Description and Distinctive Features: Beypazarı Carrot Delight is a fruit-based confection crafted from boiled and pureed carrots. It features a soft gel-like consistency, a low sheen, and a muted orange hue. With a smooth texture and a coconut coating, each piece is cut into roughly 2 cm cubes. Since Beypazarı has long been a major center for carrot cultivation, this carrot-based delight has become a cherished part of the district’s culinary heritage. Its established history and distinct flavor have created a geographical link between the product and the region’s reputation. Production Method: Carrot Purée Preparation: Traditionally, locally sourced carrots are selected for making Beypazarı Carrot Delight. The carrots are thoroughly cleaned and washed, then boiled for around one hour. Once softened, they are processed into purée using a chopping machine. For producing roughly 100 kg of the final product, the following ingredients are used: 55 - 60 kg carrot purée, 75 - 80 kg white sugar, 55 - 60 liters of drinking water, 7.5 - 8 kg natural cornstarch, and 100 - 120 g citric acid. In the cooking phase, sugar, water, cornstarch, and citric acid are first added to the pot and brought to a boil. Once the mixture starts boiling, the carrot purée is incorporated, and the mixture is cooked for 6 to 7 hours. When the cooking is complete, the thickened mixture is poured into 2 cm-deep trays and allowed to rest at room temperature for a minimum of one day. A work surface is fully covered with grated coconut, and the rested carrot delight is placed on top. The entire surface is coated evenly with coconut. Using a specially designed blade with a wooden handle, the mass is cut into 2 cm cubes. Each piece is then re-coated with coconut. Beypazarı Carrot Delight can be safely stored for up to six months in food-safe packaging at 15 - 16 °C in a dry environment.
