This time-honored dish, often likened to a variation of ashure, is especially popular during festive occasions such as holidays and weddings. The soup's key ingredient is the rosehip fruit, which is plentifully grown in the region. In addition to rosehip, it features a rich mix of ingredients including yellow and black raisins, gendime (boiled ashure wheat), dried figs, apricots, plums, dates, and either hazelnuts or walnuts, all brought together with the warm flavor of cloves. Production Method: Ingredients: - 1 kg dried rosehips, 50 g dried yellow raisins, 50 g dried black raisins, 1.5 kg powdered sugar, 100 g dried figs, 100 g dried apricots, 100 g dried plums, 50 g currants, 250 g hazelnuts or walnuts (for garnish), 200 g ashure wheat (soaked overnight, then cooked and drained), 200 g flour, Cloves (as desired). Instructions: To prepare, start by placing the dried rosehips in a pot and adding enough water to cover them. Cook them until they become soft and tender. Afterward, mash the rosehips thoroughly and strain the juice using a fine sieve. Add the pre-cooked ashure wheat to the strained rosehip juice. In a separate bowl, mix flour with some water to form a thick paste, then add this to the pot. Next, incorporate all the remaining ingredients, ensuring there is enough water to cover everything. Stir the mixture continuously and cook until it reaches a boiling point. Once it starts boiling, remove it from heat and let it cool. When serving, top the soup with crushed hazelnuts or walnuts.
