Battalgazi Hashish Mulberry Pestili : Product Description and Distinguishing Features Originating in 1928, Battalgazi Haşhaşlı Dut Pestili (Battalgazi Poppy and Mulberry Molasses Sheet) is recognized for its geographical indication and local reputation. Locally, it is commonly known as "bastık." This traditional product is known for its soft and tender texture. The preparation includes natural ingredients such as mulberry syrup, poppy seeds, milk, flour, starch, water, apricot kernels, hazelnuts, walnuts, and sesame. It is completely free of additives. Production Method: To produce 150 kg of Battalgazi Poppy and Mulberry Molasses Sheet, the following ingredients are used in minimum amounts: 60 kg of mulberry syrup, 30 kg of milk, 20 kg of starch, 10 kg of flour, 10 kg of poppy seeds, 5 kg each of walnut kernels, hazelnut kernels, apricot kernels, and sesame seeds, along with 30 kg of water. To prepare the mulberry syrup used in this traditional product, freshly harvested mulberries are thoroughly cleaned and washed to remove any stems and leaves. The fruit is then placed into cloth bags and pressed to extract its juice. The obtained mulberry juice is filtered and boiled in a cauldron to produce syrup. For ideal quality, the syrup's pH level should range between 5.0 and 5.5, and the total ash content should not exceed 3-4%, ensuring it meets the standard for molasses sheet production. A portion of the syrup is blended with some flour and starch and mixed thoroughly. In a separate container, the remaining flour and starch are whisked together with milk and water. These two mixtures are then combined and gently cooked until they reach a thick consistency. This mixture, known as "bulamaç" (pulp), is enriched by adding poppy seeds and becomes ready for spreading. After preparation, the pulp is carefully and evenly spread over clean cloths placed on iron racks. These cloths are designed to prevent any contamination such as feathers or dust. The ideal thickness of the molasses sheet should range between 0.5 mm and 2.0 mm. A mixture of poppy seeds, walnut kernels, hazelnut kernels, apricot kernels, and sesame seeds is sprinkled evenly across the surface, and the product is left to dry in a clean and hygienic environment. Once the initial drying process is complete, the molasses sheet is carefully turned over onto a clean surface. The back of the cloth is gently moistened with water to help release the molasses from the fabric. A second drying phase follows, which lasts between 10 minutes and 1.5 hours. After this, a light layer of starch is sprinkled between the molasses layers to prevent sticking, and the sheet is folded for storage. Battalgazi Poppy and Mulberry Molasses Sheet should be kept in a dry, cool place away from direct sunlight. When stored at room temperature, it is best consumed within three months. If stored at a cooler temperature between 5°C and 10°C, it can last up to six months.
