Şam böreği (also known as Damascus pastry) is a traditional delicacy that has been cherished by communities in the Southeastern Anatolia region for generations. While each area adds its own special touch to the recipe, the version originating from Batman province has gained particular recognition. This local variation has become a culinary symbol of the region and remains a top choice for both residents and visitors alike.

Production Method:

Ingredients for Batman-Style Şam Böreği: For the dough: 1 kg of flour, 1 egg, 1 tablespoon of yogurt, 1 tablespoon of vegetable oil, 250 ml of warm water, and 10 grams of salt. For the filling: 1 kg of lean minced meat, 5 to 6 medium onions, 1 bunch of parsley, 10 grams each of crushed red pepper, black pepper, allspice, and salt, along with 300 ml of sunflower oil.

Preparation:
Begin by combining the flour and egg, kneading them together. Next, add in the yogurt, vegetable oil, lukewarm water, and salt, continuing to knead the mixture until a smooth dough forms. Once kneaded, let the dough rest for 30 minutes.

Finely chop the onions and parsley. In a separate pot, heat the oil and sauté the onions until soft. Add the lean ground meat and cook thoroughly. Then mix in the chopped parsley, red pepper flakes, black pepper, allspice, and salt. Let the filling mixture cool down before using.

Once the dough has rested, divide it into equal walnut-sized portions. Roll each piece into a 10 cm diameter circle using a rolling pin. Place a spoonful of the filling in the center of each dough round, then fold into a crescent shape and seal the edges.

In a pan, heat the vegetable oil and fry the böreks until both sides are golden brown. After frying, transfer them to a plate lined with paper towels to absorb any excess oil. Once all pieces are cooked, your delicious Batman Şam Böreği is ready to serve.
