Description and Distinctive Features of Bartın Ağda Tatlısı:

Bartın Ağda Tatlısı (also known as Bartın Sugaring Sweet) is a unique, white, paste-textured dessert crafted from soapwort root, crystal sugar, citric acid, and water. This traditional sweet was first made in the village of Ağdacı and was initially sold from portable wooden boxes on the streets. Over time, it became popular throughout the Bartın region, eventually earning regional recognition as Bartın Ağda Tatlısı.

Production Method:

Preparing the Soapwort Extract: To cleanse the soapwort roots of soil and reduce their bitterness, the roots are first soaked in water for two days.

Ingredients:
- 2 kg soapwort root (roots from plants of the Caryophyllaceae family, such as Radix saponariae Albae sive L.)
- 40 liters water

Pour 40 liters of water over 2 kg of soapwort roots and boil the mixture for one hour. This process is traditionally carried out in enameled copper cauldrons. The boiling continues until the internal temperature reaches 115°C, after which the mixture is allowed to steep. After steeping for about 1.5 to 2 hours, the liquid takes on a light tea color, signaling that the soapwort extract is ready. Remove the roots, and strain the liquid using a fine mesh sieve or cheesecloth. Then, the extract is whipped into a foam using a peeled reed stick for approximately 1 to 1.5 hours. To test the texture, scoop a small amount with a wooden paddle; if it falls off easily without clinging, the foam has reached the ideal consistency.

Preparing the Syrup:
- 20 kg white granulated sugar
- 2 liters of water
- 20 g citric acid

In a copper cauldron lined with enamel, combine the sugar and citric acid, and cook the mixture over heat for about 50 to 60 minutes, until it reaches a temperature of 110–115°C. To test the readiness of the syrup, place a small drop into cold water. If the syrup forms a solid clump without dispersing, it is ready to be mixed with the foam. Allow the syrup to cool for 30 to 40 minutes before proceeding.

Preparing Bartın Ağda Tatlısı:
Once the syrup has cooled, gradually incorporate it into the previously prepared soapwort foam, stirring continuously with a wooden paddle for 1.5 to 2 hours. In its final form, the dessert should have a thick, paste-like texture, a sticky feel, and a bright white color. Bartın Ağda Tatlısı is packaged in containers that are suitable for food contact and presented for sale.
