Thanks to the rich growth of pumpkin and walnuts in the climatic conditions of the Bartın region, this dessert has been passed down through generations. The unique feature of the Bartın Pumpkin Roll Sweet / Bartın Kabak Burma Tatlısı is the technique of placing the pumpkin and walnuts filling inside the rolled-out phyllo, arranging them in a spiral pattern on a tray, baking them, and then pouring syrup over the top. This distinctive preparation method is exclusive to the region, which is why the dessert became well-known by the name of the region.

Production Method:

Ingredients: For the dough: - 1 kg flour - 3 eggs - 500 ml lukewarm water - 250 g starch For the filling: - ½ small pumpkin - 250 g (a bowl or a cup) chopped walnuts - 250 g margarine or butter - 250 g granulated sugar For the syrup: - 750 g (3 cups) granulated sugar - 600 ml water - ½ lemon

Making the dough: Start by cracking 3 eggs into the flour and knead it with enough lukewarm water until the dough reaches a consistency similar to that of an ear lobe. After allowing it to rest for 10 minutes, divide the dough into 5 equal portions, and roll each portion into a phyllo shape, using 250 g of starch evenly spread over it. Place the rolled dough on a cloth and let it rest again.

Preparing the filling: Peel the skin off the sweet pumpkin and clean the inside. Grate the pumpkin using a coarse grater. Squeeze the grated pumpkin between your hands to remove the excess water. Combine the squeezed pumpkin with chopped walnuts and a cup of granulated sugar, which has been pounded in a mortar.

Making the Bartın Pumpkin Roll Sweet / Bartın Kabak Burma Tatlısı: Cut each phyllo in half, and place one-fifth of the prepared filling along the longer side. Tightly roll it to form a cylinder. Starting from the center, arrange the rolled phyllo in a circular shape on a pre-greased tray. Continue this process with the other phyllos, filling the tray in sequence. Drizzle or brush melted margarine or butter over the top. Bake in a preheated oven at 180°C, without the fan function, until both the top and bottom are golden brown, which will take about 45-50 minutes.

Making the syrup: In a deep pot, combine 750 g of sugar and 600 ml of water. Stir continuously over the stove for 15 minutes until the sugar dissolves, then let it boil for an additional 30 minutes. Add 1-2 drops of lemon juice and continue boiling for another 5 minutes. Turn off the heat and allow the syrup to cool. After removing the pumpkin roll from the oven and letting it cool slightly, pour the pre-prepared cold syrup over it. Cover the roll with a cloth to allow the sugar to soak in.
