Arapgir Pestil Roast

Arapgir Pestil Kavurması or Arapgir Bastık Kavurması is a traditional dessert from the Arapgir district in Malatya province. It is made using dried mulberry pulp (dut pestili), eggs, unsalted butter, and crushed walnuts. In the Arapgir district, this dried fruit product is also referred to as "bastık", "bastuk", or "bastığ".

With a rich history deeply rooted in the region, Arapgir Pestil Kavurması or Arapgir Bastık Kavurması holds a prominent position in the culinary traditions of the Arapgir district. As a result, it is closely tied to the geographical and cultural identity of its place of origin.

Production Method:

Ingredients for making Arapgir Pestil Kavurması/Arapgir Bastık Kavurması (serves 4 people):
- 150 g dried mulberry pulp
- 2 eggs
- 50 g unsalted butter
- 100 g crushed walnuts

Preparation:
The dried mulberry pulps are cut into approximately 1.5 x 2 cm cubes using a knife or scissors, then separated into leaf-like pieces by hand. The cut pulps are rinsed in warm water to soften them. In a bowl, unsalted butter is melted. The softened mulberry pulps, after squeezing out any excess water, are added to the melted butter and sautéed for 1-2 minutes. Next, eggs are added, and the mixture is stirred until the eggs are fully cooked, continuing to sauté for another 1-2 minutes. Finally, crushed walnuts are sprinkled over the mixture, and the Arapgir Pestil Kavurması/Arapgir Bastık Kavurması is ready to be served.
