Description and Distinctive Features:

Antep Zahter Tea / Gaziantep Zahter Tea is a beverage made from the aerial parts of plants known by the Latin name Thymbra spicata L., commonly referred to as zahter, karabaş thyme, sater, or zater in the region. The tea is prepared using dried zahter plants and hot water. It can also be enjoyed with optional additions such as white powdered sugar, honey, and even lemon.

Antep Zahter Tea / Gaziantep Zahter Tea is an essential product in the culinary culture of Gaziantep. Its fame and recognition are closely linked to the geographical region where it is produced. The zahter plant has egg-shaped or oval-shaped leaves and fragrant flowers in shades of lilac, pink, and white. The distinctive thyme flavor and aroma are achieved by steeping the parts of the zahter plant in hot water using a tea strainer or by steeping.

Production Method:

Antep Zahter Tea / Gaziantep Zahter Tea Production Stages: For the production of Antep Zahter Tea / Gaziantep Zahter Tea, zahter plants cultivated in the Gaziantep province are preferred. These plants are usually harvested around May in the Gaziantep region. The branches of the zahter plant are cut and placed in food-safe containers. They are thoroughly washed with enough water. After washing, the cleaned parts of the plant, with excess water drained or removed, are laid out on food-grade surfaces in a clean, well-ventilated environment, away from direct sunlight, and are left to dry for approximately 1 week. Alternatively, the drying process can be performed using appropriate techniques, tools, and equipment. Once dried, the zahter is ground and processed, resulting in a mixture of leaves, flowers, and shoot tips separated from the stems, ready for consumption.

Storage Conditions and Packaging: Dried zahter plants, following the minimum technical and hygienic standards, are packaged in food-safe packaging or in bulk, and are provided to consumers with labels that comply with relevant food regulations. The dried zahter plant is stored in clean, dry locations, free from odors, and in cool environments, away from direct sunlight, from the packaging and labeling phase until it reaches the consumer.

Preparation and Service: To prepare Antep Zahter Tea / Gaziantep Zahter Tea, the dried zahter plants are placed in a strainer and passed through hot water, or alternatively, the tea is made by steeping the plants in hot water. As a guideline, about 2 grams of zahter plant is recommended for an average 200 ml tea cup, and if steeping, it should be left in the hot water for 3-4 minutes. Optionally, the tea can be enjoyed with white powdered sugar, honey, or lemon, based on the consumer’s preference.
