Andirin Andiz Molasses Product Description and Distinguishing Features: Andırın Juniper Molasses is a type of molasses derived from the cones (fruits) of the juniper tree (Juniperus drupacea L.), which belongs to the cypress family. It has a distinctive reddish-dark brown color. The juniper tree can reach a height of up to 25 meters, and its cones mature every two years. The Andırın Juniper Molasses is produced using mature cones, which are covered in a silver-colored wax layer and come in shades of purple, brown, or red. In contrast, the immature cones are green in color. The cones typically mature during the months of September and October. On average, the cones weigh 5.55 grams, measure 24.87 mm in length, and have a diameter of 22.74 mm. Around 1 kg of molasses is produced from every 6 kg of cones. Production Method: In the production of Andırın Juniper Molasses, the cones of the juniper tree grown within the specific geographical region are used. About 1 kg of molasses is produced from every 6 kg of cones. The juniper cones are harvested between late September and early October. After harvesting, the cones are packed into sacks and transported to the facility where the molasses production takes place. The juniper cones are then crushed using either a hammer or a machine. They are soaked in drinking water at a ratio of 1 to 2 and left to soak for two days. Once the soaking process is complete, the cones are drained and transferred into copper cauldrons, known as "mâsere", within the geographical region. These copper cauldrons are lined with tin. The cones are boiled for about 10-12 hours over a wood fire while being stirred. During this process, any foam that forms on the surface is removed. The boiling process results in molasses with a soluble solid content ranging from 74% to 85.53%, and it has a deep reddish-dark brown color. To achieve a darker shade, the molasses can be left to sun-dry, which also gives it a more lustrous appearance. Afterward, Andırın Juniper Molasses is transferred into glass jars, ready for sale. It can be stored for up to one year at room temperature. The final product meets the heavy metal content standards outlined in the Turkish Food Codex.
