This pastry is easily recognized by its distinct layered structure, created by spreading a flavorful mixture of sunflower oil, walnuts, and poppy seeds between thin sheets of dough before it's cooked on a griddle. In some variations, yeast is omitted, and sunflower oil is incorporated directly into the dough. Amasya Yağlısı is traditionally prepared in a round shape, with a typical diameter of around 40 centimeters. The origins of Amasya Yağlısı can be traced back to ancient times. This traditional pastry is commonly prepared and served during special occasions such as weddings, circumcision celebrations, religious holidays, and even funeral gatherings. It plays a significant role in Amasya’s culinary heritage and is an integral part of the cultural identity of the region. As a result, Amasya Yağlısı is strongly linked to its geographical origin and is widely recognized for its traditional and ceremonial importance. Preparation: In a mixing bowl, wheat flour, dry yeast, and salt are combined. Water is gradually added while kneading until a soft and non-sticky dough is formed. This dough is then divided into two portions. Each portion is covered with a damp, food-safe cloth and allowed to rest for approximately 10 minutes. In a separate bowl, crushed poppy seeds, chopped walnuts, and sunflower oil are blended together to form a smooth and even filling mixture. Once the dough has rested, the pieces are rolled out using a rolling pin. After brushing the surface with 200 ml of sunflower oil, the prepared filling is evenly spread over the entire dough. The dough is then rolled up and coiled into a rose-like shape by twisting it around itself. Once the dough has been shaped into a rose form, it is left to rest for 5 minutes. Following this short rest, it is rolled out with a rolling pin until it reaches a diameter of approximately 40 centimeters. The prepared pastry is then cooked on a pre-heated griddle that has been lightly greased with 15 ml of sunflower oil, baking at 200 °C for about 7 minutes. If Amasya Yağlısı is made without using yeast, the same preparation steps apply; however, instead of yeast, 200 ml of sunflower oil is added directly into the dough. Amasya Yağlısı, when packaged in food-safe packaging, can be frozen and stored for up to 1 month without compromising its quality.
