The Aksaray Flour Cookie, also referred to as the Aksaray Soldier Cookie, is made by mixing butter, white sugar, and wheat flour into a dough, shaping it into long, slender strips, then cutting it into 5 cm pieces and curling each into an "S" shape before baking. These cookies are known for their pale yellow hue with a touch of golden brown and are cherished for their light, crumbly texture.

Often called the "soldier cookie", this traditional treat earned its name from the custom of gifting it to soldiers in the past, symbolizing care and remembrance from loved ones.

The origin of the Aksaray Flour Cookie, also known as the Aksaray Soldier Cookie, can be traced back to ancient times, where it held a special place in the culinary heritage of the region. With its unique shape and distinct method of preparation, this cookie is closely tied to the geographical identity of Aksaray, reflecting a deep-rooted connection between the local tradition and the region itself.


Production Method:

For the production of 40 pieces of Aksaray Flour Cookie / Aksaray Soldier Cookie, the ingredients are as follows: - 250 g butter - 200 g white sugar - 350 g wheat flour

To prepare the Aksaray Flour Cookie or Aksaray Soldier Cookie, begin by melting the butter in a saucepan, then transfer it to a bowl and allow it to cool. Once the white sugar has been crushed into a fine powder, add it to the cooled butter. Gradually add flour while continuously mixing until a smooth, non-sticky dough forms. Knead the dough by hand for about 7–8 minutes. Take walnut-sized portions and roll them into cylindrical shapes on a pastry board, roughly 2 cm in diameter and 20 cm in length. Cut these into 5 cm pieces, shape each into an "S", and place them onto a baking tray.

Bake in a preheated oven at 160℃ for approximately 15–17 minutes, or until the tops take on a light pinkish hue. It's important not to open the oven door during baking, as doing so could cause the cookies to harden excessively or crack. Once baked, allow the cookies to cool completely before serving.
