Akhisar Domat Olive Oil Product Description and Distinguishing Features: Akhisar Domat Olive Oil is an extra virgin olive oil made from Akhisar Domat Olives, which are officially recognized as a geographical indication under the number 166, within the same regional area. Production Method: Akhisar Domat Olives, officially registered as a geographical indication with the number 166, are harvested within the specified regional boundaries. Olives intended for olive oil production are first cleaned with purified water to remove any impurities. The cleaned olives are then transferred to crushers, where they are crushed by adding water at a temperature of up to 26°C. The resulting olive mash is processed into a paste in stainless steel containers, where circulating water is applied externally, with the option to gently heat the olive paste up to a maximum of 26°C to achieve the desired consistency. This method helps to break the oil-water emulsion in the olives, increasing the proportion of free oil. The olive paste is separated into olive oil and pomace through either centrifugation or pressing. The olive oil, once separated from the pomace, is further separated from the black water it contains. The extracted olive oil is stored in stainless steel tanks designed for food contact, kept away from direct sunlight, and maintained in an environment with a temperature range of 18-22°C. The olive oil is clarified to remove its sediments using the earthy filtration technique. After filtration, the olive oil is packaged in food-safe glass or tin containers. Olive oils that are not immediately ready for market distribution are stored in stainless steel tanks suitable for food contact, in an odor-free environment that won’t negatively affect the product, away from direct sunlight, and at a temperature of 20°C.
