Ağrı Haşıl Yemeği (also known as Ağrı Wheat Dish) is a traditional dish made from bulgur or cracked wheat, enriched with butter, water, salt, and ideally, asphodel leaves (Asphodelus aestivus L).

The leaves of asphodel, locally referred to as "gulik otu," are harvested fresh during their growing season in April and May. After being cleaned and boiled in hot water for about 10-15 minutes, they are frozen to preserve them for use throughout the year. Ağrı Haşıl Yemeği boasts a rich history and holds great significance in the culinary heritage of the Ağrı province. As a result, it is strongly linked to the region's cultural identity.

Production Method:

Asphodel leaves and butter, preferably sourced from the geographical boundaries, are used in the production of Ağrı Haşıl Yemeği. Ingredients for Ağrı Haşıl Yemeği (serving 10 people): - 800 g bulgur or cracked wheat - 90-120 g butter - 1 liter water - 30-40 g salt - 1.25 kg asphodel leaves (optional)

Preparation

If you are adding the optional asphodel leaves to Ağrı Haşıl Yemeği, first remove the transparent cup leaf at the base where the leaves meet. Discard the base and remove any yellowed leaves or parts at the tips. Rinse the leaves 2-3 times, ensuring they are clean. You can either chop the leaves into 2-4 cm pieces and add them to the dish or boil them for about 10-15 minutes, then freeze them for later use.

Soak bulgur or cracked wheat in hot water for at least 30 minutes to soften. Once drained, place it in boiling hot water, stirring with a wooden spoon until it softens, which takes about 15 minutes. If you're using asphodel leaves, add them at this point and cook for an additional 15-20 minutes. When the water in the pot has reduced, add 60-80 g of butter and some hot water. Continue cooking for another 15-20 minutes, stirring occasionally. Once the dish reaches a consistency that’s neither too runny nor too thick, add salt and remove from heat. In a separate bowl, melt 30-40 g of butter. Serve Ağrı Haşıl Yemeği by placing it on a plate, drizzling the melted butter over it, and serving.
