Afyon Cream Product Description and Distinctive Features: Afyon Clotted Cream is produced from rich buffalo milk. The buffaloes are nourished with grasses that grow in the unique flora of the Afyon region, as well as with poppy (haşhaş) pulp and various oil-rich seeds such as sunflower and cottonseed. This specialized diet gives the milk—and therefore the clotted cream—a distinctive taste and aroma. Afyon Clotted Cream is a high-quality dairy product that contains at least 0.5% protein, 0.5% carbohydrates, 0.5% ash, 60% fat, and 65% dry matter. Production Method: After being thoroughly filtered, buffalo milk is poured into clotted cream pans made from food-safe materials. The milk is then gently heated up to 92°C and allowed to cool naturally for a minimum of 4 hours. During this cooling phase, the pans are covered with clean cheesecloth or a similar breathable fabric to absorb any condensation. Once cooled, the pans are transferred to a cold storage room maintained at no more than 4°C, where they are left for at least 12 hours. After chilling, the pans are removed and a layer of clotted cream is carefully separated using a stainless steel tool that is both sharp-pointed and finely edged. The remaining cream is collected by turning it into the milk and is then manually packaged.
