Production Method: For making Adapazarı Pumpkin Dessert, Adapazarı White Chestnut Pumpkins weighing between 13-15 kg and fully matured are used. The pumpkin is first sliced at the node and then peeled using a knife. After cleaning, it is cut into pieces approximately 7-9 cm in length and 3-6 cm in width. The pumpkin pieces, separated into small parts, are washed with drinking water to remove any peel and seed remnants. Once washed, the sliced pumpkin pieces are not left uncovered or at room temperature to avoid altering the texture of the product. White sugar equal to half the weight of the pumpkin is sprinkled over the pieces, along with one-third of the volume of the pumpkin pieces, then covered and placed in the refrigerator to rest for about 24 hours. In a cooking container, the rested pumpkin pieces are placed, and drinking water equal to half the weight of the pumpkins is added to begin the cooking process.
