Production Method: Meatball Ingredients: 1 kg minced beef 1 medium-sized onion 80 g crumbled stale bread 10 g cumin 10 g black pepper 10 g red pepper flakes 30 g salt Soaking Water Ingredients: Thinly sliced and leavened stale dark oven bread 1 kg beef broth 50 g red pepper flakes 100 g vegetable oil Salt Beef Broth Preparation: Large beef bones, particularly from the rib and shank, are cracked in half and placed into a large cauldron with 12 liters of water and 2 large onions. The mixture is then simmered on low heat for about 12 hours. Afterward, the broth is filtered through a cheesecloth to remove any bone fragments, resulting in a pure beef broth. Grilling: Oak charcoal is the preferred choice for grilling. Allow the charcoal to burn until it turns white on top before starting the grilling process. Garnish: 2 medium-sized tomatoes, lightly grilled (with 1/4 of a tomato used for each serving). 8 pointed peppers, grilled gently (with 1 pepper used for each serving).
